Brown Sugar Maple Glazed Wild BC Salmon
Celebrate Wild BC Salmon!

Ingredients:
2 x 6 oz. Wild BC Salmon fillets
1 tbsp olive oil
2.5 tbsp salted butter
2 tbsp caesar butter
1 cup gnocchi
1/2 cup cherry tomatoes
1/2 cup broccolini
2/3 cup lemon herb infused cream
1 1/4 tsp mustard
3/4 tsp brown sugar
2 tsp chilli oil
2 tsp dill oil
Green onion, to garnish
Method:
COOK THE SALMON
Place salmon on pan with olive oil. Sear for 3-4 minutes, flip and cook for another 3-4 minutes until cooked through. Season lightly with salt and pepper.
COOK THE SIDE DISHES
In a stainless steal skillet, melt butter over medium heat. Once butter foams, add gnocchi, broccolini and whole cherry tomatoes. Cook for 6-8 minutes, stirring occasionally, until gnocchi is seared, tomatoes blistered, and broccolini cooked. Add caesar butter to pan and toss together. Remove from heat.
HEAT UP SAUCE
Re-heat lemon cream sauce on the stovetop or microwave until warmed through.
GLAZE THE SALMON
In a small bowl, combine mustard and brown sugar and stir until smooth to make a glaze. Once salmon is cooked, coat with brown sugar mustard glaze.
PLATE & GARNISH
Plate the dish into a pasta bowl starting with gnocchi. Add whole tomatoes, broccolini, and top with salmon. Pour over lemon herb cream sauce. Garnish with chilli oil, dill oil, and curly green onion.
