Wild BC Salmon Lox and Avocado Toast

 

Your brunch game will be strong with this amazing recipe featuring Wild BC Salmon Lox and ripe creamy avocado! Impress your friends, amaze your family, or spoil yourself with a fresh and healthy breakfast including your favourite Wild BC Salmon!

 Serves two, but let’s face it you are going to want to eat it ALL yourself so let’s say it serves one!

Ingredients:

  • 50g Wild BC Salmon Lox (purchased at Westcoast Select )

  • 1 Avocado (ripe and soft works best here!)

  • 4 tbsp Red Onion – Fine Diced

  • 1 tbsp Fresh Dill Fronds

  • 1 Red Chili – Fine Sliced

  • 1 Lemon – quarter and zested

  • 2 Pieces of Bread – Toasted (whatever type you like. We tend to lean towards a grainy one)

  • Course Salt

  • 1 Garlic Clove – Smashed

Directions:

  1. Toast your bread. When it pops, rub your smashed garlic clove all over it.

  2. Cut avocado in half, discard stone, and smash in side of the skin. Add a squeeze of lemon juice and a pinch of salt.

  3. Spread avocado over toast. Layer (as much or as little) Lox onto the avocado and then top with whatever you would like, as much as you wish!

  4. Finish with a sprinkle of dill, lemon and salt.

  5. Enjoy and try to share with others :)
